Ahh...this is a refreshing drink - nothing beats a refreshing chilled watermelon juice on a hot day to chill you down. If that wasnt cool enough, the combination of the cucumber, mint and lemongrass will make you feel refreshed and cleansed at the same time. Just dont be tempted to put a splash of vodka in there...

Ingredients
  • Watermelon - 500g / 1.1 lb, skin removed cut into large batons
  • Cucumber - ½
  • Lemongrass - 3 fresh stalks
  • Mint leaves - 4 fresh sprigs
  • Ice cubes -

Steps

  • Slice two slices of cucumber at an angle for garnish. Put the watermelon and remaining cucumber and two of the lemongrass stalks through a juicer.
  • Take the leaves from 2 sprigs of mint and blend in a jug blender with the watermelon juice.
  • Pour into 2 tall glasses filled with ice. Garnish with cucumber slices and mint sprigs. Cut the last lemongrass stalk lengthways a half into each glass too.
