Ingredients
  • Minced beef - 350g / 0.77 lb
  • Ginger - 1 tbsp fresh root, peeled and grated
  • Garlic - 4 cloves, finely chopped
  • Coriander - 25g / 0.06 lb, finely chopped
  • Spring onion - 1 large, finely chopped
  • Shaosing rice wine - 2 tbsp (or dry sherry)
  • Freshly ground black pepper - 1 pinch
  • Toasted sesame oil - 1 tsp
  • Low sodium light soy sauce - 2 tbsp
  • Sea salt - 1 tsp
  • Soft brown sugar - 1 tsp
  • Red chilli - 1, deseeded, finely chopped
  • Egg yolk - 1
  • Vegetable oil - 1 litre, for deep-frying
  • Little Gem lettuce - 4, washed, leaves separated
To serve
  • Sweet chilli sauce - 4 tbsp
For the garnish
  • Fresh coriander leaves -
  • Mint leaves -

Steps

  • Place the beef, ginger, garlic, coriander, spring onion, rice wine, pepper, and sesame oil, soy sauce, salt, sugar, chilli and egg yolk in a bowl.
  • Mix together and shape into small meatballs. Heat the vegetable oil in a wok or saucepan.
  • Fry the meatballs in batches until cooked through and browned. Remove with a slotted spoon and drain the meatballs on kitchen paper.
  • Lay out the outer leaves from the little gem lettuce onto a serving platter, place a couple of meatballs in each one and garnish with fresh coriander and mint. Serve with sweet chilli sauce.
