This is a great way to enjoy tomatoes. Growing up in Taiwan we had tomatoes as fruit at the end of the meal, just served sprinkled with some sugar or shaved salted plums. Inspired by the traditional recipe, I decided to make my modern take of sweet and sour - by dressing the tomatoes with rice vinegar tossed together with light soy and brown sugar. If you want to make this dish healthier and you are watching your sugar content, just a small sprinkle will do. Fresh, easy, delicious and fast - a great accompaniment to other dishes.

Ingredients
  • Assorted tomatoes 350g / 0.77 lb - cherry, plum, beef, and heirloom, sliced into quarters
  • Rice vinegar 2 tbsp
  • Low sodium light soy sauce 1 tbsp
  • Soft brown sugar 2 tbsp
  • Sweet basil 1 small handful, shredded

Steps

  • Place the tomatoes in a small bowl and add the rice vinegar, light soy and soft brown sugar and toss together well. Leave to marinade for 15 minutes in the fridge. Just before serving garnish with the sweet basil and serve.
