Mushrooms are full of antioxidants that are so good for you. This is a healthy light delicious stir-fry with a medley of different fresh mushrooms. Perfect as a side dish or toss in some cooked egg or rice noodles for a more substantial meat-free supper. Enjoy!

Ingredients
  • Groundnut oil - 1 tbsp
  • Garlic - 2 cloves, finely chopped
  • Shiitake mushrooms - 65g / 0.14 lb
  • Oyster mushrooms - 65g / 0.14 lb
  • Enoki mushrooms - 65g / 0.14 lb
  • Chinese black woodear mushroom - a handful, rehydrated
  • Rice vinegar - 1 tbsp
  • Sesame oil - 1 tbsp
  • Low sodium light soy sauce - 1 tbsp

Steps

  • Prepare the mushroom by trimming the enoki mushrooms and pulling them apart to separate them. Slice the shitake mushrooms and tear the oyster mushrooms into thick pieces. Rip the woodear mushrooms into manageable pieces.
  • Put a wok on to high heat, when smoking add the ground nut oil and the garlic, allow it to sizzle for a few seconds before adding the shitake mushrooms- allow to cook for one minute.
  • Add the oyster mushrooms and the woodear’s and allow to cook for 30 seconds before adding the rice vinegar, sesame oil and light soy sauce.
  • Remove from heat, add the enoki mushrooms and toss well for 30 seconds. The heat from the wok will be enough to cook the enoki’s perfectly. Serve immediately.
