Dinosaur Kale -
200g, sliced into 1cm pieces, on the angle
Lime, juiced -

Mirin -
2 tablespoon
Low sodium light soy sauce -
1-2 tablespoon
Toasted sesame oil -
1-2 tablespoon
Steps
Heat the wok over high heat and add the groundnut oil. Give the wok a swirl and then add in the garlic, ginger, chilli and stir for a few seconds. Then add the kale pieces and toss cooking for less than 1 minute. As the Kale wilts, push it and the aromatics to the side of the wok and add the tofu pieces then toss cooking together for 2 minutes.
Season with the mirin, low sodium light soy sauce and toasted sesame oil. Toss well.
For acidity and a sour note, season with the juice of 1 lime and mix well cooking for a further minute.
Once the Kale has softened (but still has a bite) and the tofu is heated through, take it off the heat and its ready to serve. Serve it on its own for two as a healthy carb-free dinner or serve with brown rice and other stir-fry dishes to share.
