This is the perfect recipe to use up leftover roast duck from a roast! The hoi sin sauce gives it a rich soy plummy taste while the marmalade will give the duck a bitter zesty sweetness - just delicious sandwiched between two slices of freshly baked granary bread.

Ingredients
  • Granary bread - 4 slices
  • Shredded cooked roast duck meat - 150g / 0.33lb
  • Cucumber - 12 slices
  • Baby spinach - 2 handfuls
  • Marmalade - 3 tbsp
  • Hoi sin sauce - 3 tbsp

Steps

  • Lay the 4 slices of bread onto a flat surface and spread two slices with hoi sin sauce and the other two with marmalade.
  • Next top the hoi sin side with duck, followed by cucumber and then finally the spinach. Place the marmalade side on top and press down firmly. Cut in half and enjoy. The perfect way to use up that left over roast duck.
