This is my favourite summertime drink! Refreshing on a hot summers day and so good for you. Lemons are packed with vitamin C, ginger is great for the immune system, and cayenne pepper helps your digestion and the manuka honey makes gives a delicious sweetness and packed with nutrients. A tasty fusion treat!

Ingredients
  • Ginger - 1 inch, peeled
  • Lemon juice - 1 lemon
  • Manuka honey - 2 tbsp
  • Tonic / soda water - 200ml / 0.84 cup
  • Cayenne pepper - few small pinches
  • Ice cubes -
For the garnish
  • Mint leaves -

Steps

  • Grate the ginger over a piece of muslin or a clean j cloth. Squeeze out the juice from the ginger into a small jug, you will need 1 tablespoon of ginger juice.
  • Add the lemon juice and honey to the jug and mix well to combine. Fill a tall glass with ice and pour over the lemon, ginger and honey mixture. Top the glass with tonic water, sprinkle a few small pinches of cayenne pepper garnish with mint leaves and a cocktail stirrer.
