Dont underestimate the tastiness of this dish! Sweet fresh carrots and crunchy French beans stir fried in a hot wok with garlic, ginger and vegetarian oyster sauce, soy and rice vinegar. This is a delicious dish and the perfect accompaniment with rice. To make this dish more substantial add some tofu mock meat (soya protein pieces).

Ingredients
  • Carrot 200g / 0.44 lb, peeled and sliced on an angle
  • French bean 200g / 0.44 lb, trimmed and blanched
  • Groundnut oil 1 tbsp
  • Garlic 2 cloves, finely chopped
  • Ginger 1 tbsp, grated
  • Vegetarian oyster sauce 1 tbsp
  • Low sodium light soy sauce 1 tbsp
  • Rice vinegar 1 tbsp
For the garnish
  • Crispy shallots (optional)

Steps

  • Add the oil to a wok and heat to high. Add the garlic and ginger and cook for 30 seconds. Add the carrot and cook for another minute.
  • Add the beans, oyster sauce, soy and vinegar and toss for another 30 seconds. Serve immediately and garnish with crispy fried shallots.
