In Britain, we are spoiled with the best tender asparagus! I like to put a Chinese spin on such a tasty way to serve vegetables - grilled - by "marinating" the asparagus in a Chinese gingery, yellow bean, soy marinade - then seasoned with a dash of sour from a freshly juiced lemon, and garnished with nutty black sesame seeds. Delicious served with fried eggs with a dash of soy sauce for a tasty "Chinese" brunch dish.

Ingredients
  • Asparagus - 1 large bunch, trimmed on an angle
  • Ginger - 1 tbsp grated
  • Yellow bean sauce - 1 tbsp
  • Low sodium light soy sauce - 2 tbsp
  • Groundnut oil - 1 tbsp
  • Lemon juice - 1 tbsp
  • Sesame oil - 1 tsp (optional)
  • Black sesame seeds - 1 tbsp

Steps

  • Make the marinade by mixing together the ginger, yellow bean paste, light soy, groundnut oil, lemon juice and sesame oil together. Place into a shallow dish and add the asparagus making sure to coat the asparagus well with the marinade. Leave for one hour to marinade.
  • Heat up a griddle pan and add the asparagus in batches, (reserve the marinade and heat in a small pan) and cook for 3-4 minutes, turning frequently.
  • Serve onto a plate and spoon over a little of the reserved marinade “sauce”. Sprinkle with black sesame seeds.
