Ingredients: 2 star Star anise 1 tbsp Chinese five-spice powder 300g / 0.66 lb Peanuts with shell 500ml / 2.11 cups Vegetable stock ½ tsp Dark soy sauce 1 tbsp Low sodium light soy sauce 1 pinch Salt 1 large, peeled and diced 1cmX1cm Carrot 1/2, deseeded and cut into 1cmX1cm square Cucumber 1 small handful, finely chopped Coriander few tbsp Groundnut oil few tbsp Retained liquid 1 tbsp Chilli oil This is one of my favourite appetiser dishes or side dishes. Once boiled, the peanuts take on a sweet savoury fragrant flavour and aroma and toss it with some of the cooking liquid, add some fresh diced carrots and cucumber and you will not be disappointed. Ingredients
  • Star anise - 2 star
  • Chinese five-spice powder - 1 tbsp
  • Peanuts with shell - 300g / 0.66 lb
  • Vegetable stock - 500ml / 2.11 cups
  • Dark soy sauce - ½ tsp
  • Low sodium light soy sauce - 1 tbsp
  • Salt - 1 pinch
  • Carrot - 1 large, peeled and diced 1cmX1cm
  • Cucumber - 1/2, deseeded and cut into 1cmX1cm square
  • Coriander - 1 small handful, finely chopped
  • Groundnut oil - few tbsp
  • Retained liquid - few tbsp

Steps

  • Add the star anise, five spice, vegetable stock, soy and peanuts to a saucepan. Boil the peanuts on low to medium heat in the spiced liquid for 50-60 minutes. Top up the liquid with water if it reduces too much.
  • Once boiled, remove and chill at room temperature for 1 hour. Add the carrot and cucumber and transfer to fridge and chill for a few hours. Just before serving, drizzle with a few tablespoons of groundnut oil, retained spiced liquid and chilli oil. Toss through with coriander and serve.
