Ingredients:
1 small handful, pre-soaked in warm water for 20 minutes, roughly chop Dried Chinese shrimp1 bunch (or spring onions), sliced into 2 inch pieces Garlic chives1 tablespoon Groundnut oil3 tablespoons Cold water3 medium organic, whole Egg1 tablespoon Shaosing rice wine1 tablespoon Low sodium light soy sauce1 tablespoon, or chilli oil (optional) Toasted sesame oilA traditional recipe from Grandma.
Dried Chinese shrimp -
1 small handful, pre-soaked in warm water for 20 minutes, roughly chop
Garlic chives -
1 bunch (or spring onions), sliced into 2 inch pieces
Groundnut oil -
1 tablespoon
Cold water -
3 tablespoons
Egg -
3 medium organic, whole
Shaosing rice wine -
1 tablespoon
Low sodium light soy sauce -
1 tablespoon
Toasted sesame oil -
1 tablespoon, or chilli oil (optional)
Steps
Prepare one small handful of dried shrimp. Soak it in warm water for 20 minutes to soften, drain and roughly chop.
Heat a wok over high heat and add the groundnut oil. Add the dried shrimp pieces and wok fry for one minute until toasted. Then add in the Chinese chives. Stir fry for a minute and add in the water to help create some steam. Stir for 2 minutes until the chives have wilted. Make some space in the middle of the wok and add in three eggs and then stir to scramble. Season with Shaosing rice wine, light soy and toasted sesame oil or chilli oil (optional) and more salt to your taste. Toss together and then serve immediately Jasmine rice.
