A quick simple healthy recipe that will pick you up in no time!

Ingredients
  • Ginger 1 inch piece of fresh root, peeled and grated
  • Chinese Choi Sum 400g (tenderstem broccoli as a substitute), washed
  • Groundnut oil 1 tablespoon peanut oil or
  • Shaosing rice wine 1 tablespoon
  • Dried goji berries 1 small handful
  • Vegetable stock 100ml (preferably hot)
  • Sea salt 2 pinches

Steps

  • Heat a wok over high heat until smoking, then add the groundnut oil.
  • Then add the ginger and stir-fry for a few seconds.
  • Add the Choi sum leaves to the wok and stir-fry for a minute, tossing it in the wok.
  • Add the Shaosing rice wine and cook tossing and stirring for another minute.
  • Then add the goji berries followed by the stock. Keep stirring until all the leaves have wilted cooking for another minute. Season with two large pinches of Sea Salt. Give it a final toss and then serve immediately. <br><br>Serving suggestion: Serve with some brown rice and a side condiment of freshly sliced red chillies dressed in soy sauce, or serve as an accompaniment to your favourite Chinese/Asian dishes.
