Little Gem lettuce -
2, stalks removed, leaves separated, washes, drained, sliced into bite sized pieces
Garlic -
2 cloves, crushed, peeled and roughly chopped
Ginger -
1 inch piece of fresh root, peeled and grated
Red cayenne chilli -
1, deseeded and finely chopped
French bean -
200g, chopped into 1 cm pieces
Groundnut oil -
1 tablespoon
Minced beef -
250g
Shaosing rice wine -
1 tablespoon
Fish sauce [nam pla] -
2 tablespoon
Toasted sesame oil -
1 tablespoon
Soft brown sugar -
1 teaspoon
Sea salt -
1 pinch, ground
Steps
Prepare the gem lettuce leaves, garlic, ginger, chilli and the french beans. Place the gem lettuce leaves on a plate leaving some space in the centre of the plate.
Heat a wok over high heat and when the wok starts to smoke, add the groundnut oil. Give the oil a swirl and then add the garlic, ginger and chilli and stir-fry for a few seconds and then add in the minced beef. Cook for minute stirring until the beef starts to brown. Add all the french beans cooking for 1 minute. Then season with Shaosing rice wine, fish sauce, toasted sesame oil, soft brown sugar and sea salt.
Take it off the heat and place it onto the lettuce leaves. Eat immediately or serve with steamed Jasmine rice.
