Little Gem lettuce2, stalks removed, leaves separated, washes, drained, sliced into bite sized pieces
Garlic2 cloves, crushed, peeled and roughly chopped
Ginger1 inch piece of fresh root, peeled and grated
Red cayenne chilli1, deseeded and finely chopped
French bean200g, chopped into 1 cm pieces
Groundnut oil1 tablespoon
Shaosing rice wine1 tablespoon
Fish sauce [nam pla]2 tablespoon
Toasted sesame oil1 tablespoon
Soft brown sugar1 teaspoon
Sea salt1 pinch, ground
Prepare the gem lettuce leaves, garlic, ginger, chilli and the french beans. Place the gem lettuce leaves on a plate leaving some space in the centre of the plate.
Heat a wok over high heat and when the wok starts to smoke, add the groundnut oil. Give the oil a swirl and then add the garlic, ginger and chilli and stir-fry for a few seconds and then add in the minced beef. Cook for minute stirring until the beef starts to brown. Add all the french beans cooking for 1 minute. Then season with Shaosing rice wine, fish sauce, toasted sesame oil, soft brown sugar and sea salt.
Take it off the heat and place it onto the lettuce leaves. Eat immediately or serve with steamed Jasmine rice.
