To celebrate World Vegan Day, I wanted to dedicate a dish to all those people who choose to benefit from veganism, whether for the health benefits, the environment or the protection of animals. Although I am not vegan myself, my husband is and we both enjoy cooking with plant-based ingredients as much as possible. There is so much variety, flavour and texture that you can get from a vegan food. Why not try to incorporate just one vegan meal into your week to enjoy some of the benefits? This is my recipe for a Fast Dofu Salad, great for a tasty lunch. ‘Dofu' is the Chinese transliteration or you may know it better as ’tofu’, which is the Japanese transliteration. Either way, it is delicious and has become increasingly popular in the last few years. I use it in a lot of recipes. Whether used in a salad or a stir fry, smoked or silken, it is a great addition to the vegan store cupboard. This recipe is healthy, light and full of flavour!
