Roast turkey and stuffing, mashed potato, green bean casserole and pumpkin pie... it can only mean one thing, Happy Thanksgiving! As luck would have it, I am celebrating in America myself this year! I am planning to cook my Twice cooked salt and pepper chicken. This is one of my favourite ways to cook a whole chicken. Organic is best, as there is less fat beneath the skin - the trick to getting a delicious crisp skin. The chicken is first stuffed and boiled to infuse all the flavours then roasted until the skin is golden. The full recipe is right here. So, what are you cooking this year?
