Happy Halloween to you all! Whether you are out ‘trick or treating’, apple bobbing or off to a ghoulish fancy dress party, I hope you all have loads of fun! My America friends have always celebrated Halloween in spectacular style. The Village Halloween Parade in NYC is a sight to behold with puppets, costumes and dancing. It’s great to see this influence moving across to the UK. Halloween seems bigger and better than ever and a great excuse to decorate your home and garden, traditionally intended to ward off evil spirits. My favourite tradition is carving scary face lanterns out of pumpkins. The delicious flesh can make a great meal so don’t throw it away once you have scooped it all out! It is a good source of fibre and complex carbohydrates and high in vitamin A and C. There are many ways you can use the pumpkin such as soups and in risottos but for something a bit different you could try my Steamed ginger coconut pumpkin mash, full recipe in Eat Clean: Wok Yourself to Health.
