Mid-week meals are always a struggle this time of year. You want to be healthy but you can’t face spending hours in the kitchen recreating complicated recipes. Most of us have chicken on our shopping lists - it’s a great source of lean, low-fat protein and, if you treat it well, can really deliver on flavour. A great low-carb lunch or light dinner is my Chicken with garlic, lemon, herbs and rocket, cherry tomatoes and pecan salad. The chicken in this dish is truly delicious, infused with all the flavours of the garlic and herbs. The pecans add a tasty crunch and are an excellent source of vitamin E which promotes beautiful skin - just what we need during these cold months. The whole dish is rich in nutrients and takes only minutes in the Lotus Wok. Most of the ingredients should be in your store cupboard saving you another trip to the supermarket.
