Twice Cooked Salt and Pepper Chicken

As I picked up my Remembrance Poppy again this year, it always makes me reflect on the bravery of the servicemen and women who fought and worked tirelessly in all the conflicts since 1918. Inspired by the poignant poem ‘In Flanders Fields’ which talked of the poppies that grew out of the graves of fallen soldiers, the poppy is the traditional symbol of remembrance that I choose to respect. All donations to the "Poppy Appeal" goes on to support all current and former British military personnel. I love that Britain is steeped in traditions and, without a doubt, many of you will be enjoying a delicious British roast dinner on Sunday too. Although there is nothing more satisfying than a roast chicken dinner, if you fancy trying something different, how about Twice Cooked Salt and Pepper Chicken instead? Taken from Ching’s Fast Food, this is one of my favourite ways to cook a whole chicken. Organic is best, as there is less fat beneath the skin - the trick to getting a delicious crisp skin. The chicken is first stuffed and boiled to infuse all the flavours then roasted until the skin is golden. Delicious! I hope you all enjoy the rest of your weekend! Love, Ching x
