Today’s Easy Chinese episode, The Chinese Like it hotter, is about... yes, you guessed it... spicy food! Chinese food is not often thought of as a spicy cuisine, I want to change this perception to show you how Chinese Cuisine can be both dangerously hot and pleasantly accessible! Now when it comes to hot and spicy Chinese dishes, most people think of Sichuan cuisine. So my first stop is Chung King restaurant in LA famed for their HOT Sichuan dishes. I discover Chef Hua Yang’s signature “Chongqing Shrimp” and classic Sichuan dishes - all mind blowingly HOT but deliciously addictive! Inspired, I want to explore perhaps the hottest famous cuisine around and see how Chinese cuisine compares so I visit Chef Roberto Barrelleza’s “Babita Mexicuisine” – a famous and authentic Mexican restaurant like no other. Chef Barrelleza cooks me his signature “Habanero Shrimp Topolobampo” while I cook him my fusion “Habanero Scallops” using ingredients borrowed from Mexico and China but cooked in a hot WOK. Who’s dish is the spiciest? You will have to watch to find out…. Finally my love of chillies and spices leads me to an apothecary of spices at Silverlake Spice Station. Here, I pick out a hot combo of spices for my Hunan inspired Four Pepper Spiced Chicken. If you like fried spiced chicken then this is the dish for you!
