Hands up if you are still feeling full from the Easter weekend... I had a really great weekend full of treats but I have made a promise to myself to cook up some of my favourite eat clean recipes and give my body some much needed TLC. As it is still a little chilly outside, I am going to warm myself up with my Nourishing butternut squash, shiitake mushroom, Savoy cabbage and brown rice congee, cooked in my Lotus Wok. I could do with the extra fibre and potassium for some energy and I will get a metabolic boost from the spicy properties of the chilli and ginger.
