Last week Thai curry, this week noodles! Thai style chicken and prawn ho fun noodle, to be exact. This is a really easy wok fried dish and great for a Saturday night treat. My take on a Pad Thai, I love the combination of chicken and prawns and the fresh crunchy mangetout. If you are looking for a vegan alternative, try substituting the chicken, prawn and egg with some firm smoked tofu cubes, throw in some extra veg such as sugar snap peas and baby corn and use tamari instead of the fish sauce.
