Hands up if you are craving a curry for tonight’s dinner! Those who follow my blogs know that I love and positively encourage eating clean and healthy foods as much as possible but, with the cold weather closing in, we can’t help but crave some comfort food. I never like to deny myself. If I stick to my 80/20 rule, 80% fresh and healthy 20% indulgent treat, then I feel like I am getting the best of both worlds. Friday night is a great time to allow yourself some indulgence after a long working week. With the weather so cold, we all need something warming and full of flavour. I’ve decided on my Thai Squid Red Curry with Jasmine Rice. At 353 calories per serving and packed full of veg and amazing spices, I won’t be feeling too guilty. To save a few extra calories, you could use reduced fat coconut milk, just a teaspoon of oil and just a sprinkle of sugar to sweeten. If you are not a fan of squid, try using organic chicken, prawns, tofu or just mushrooms instead. Making the Thai red curry paste from scratch is delicious and easy to make but you can pick up ready made pastes quite easily now. Just watch out for hidden nasty's! Have a great weekend!
