Now the weather is getting colder, my failsafe lunch is often a delicious broth or soup. My Spinach and broccoli egg-drop soup with avocado rye toast is a tasty, lean and full of nutrients and flavours. The spinach and broccoli are like natural multi-vitamins, providing plenty of fibre. Along with the protein from the eggs, the soup is a nutrition powerhouse. Team it up with some dark rye bread, a great alternative to wheat, and spread on a thick layer of creamy avocado.
