Wow, I am loving this heatwave! The long, warm, summer days are so welcome. I am craving something light and healthy for lunch and my Spicy wild rice salad seems the obvious choice! This is a mouth-wateringly good salad and it couldn’t be easier to make. It’s perfect on its own for a light lunch or serve with fish, shellfish or meat as an tasty accompaniment to a main meal. The best thing about this salad is that it keeps in the fridge and is better when it has had a little time to marinade in the dressing and soak up all those wonderful flavours of the soy, lemon juice and sesame oil.
