It’s National Parks Week - a celebration of everything that is unique and wonderful about Britain’s open, green spaces. With the emphasis on adventure, let’s all go out and enjoy the diverse landscapes, activities and events that are all waiting for us. Nothing clears my head better than a long walk in the fresh air. It helps with my creativity too when thinking up my next recipe. Of course, I don’t go anywhere without a snack to see me through the day. My Sweet & Sour Cherry Tomato Salad is a great dish when you are on the move. Inspired by the traditional recipe, I decided to make my modern take of sweet and sour - by dressing the tomatoes with rice vinegar tossed together with light soy and brown sugar.
