After all the chocolate and curry of the past few days, it’s time to cleanse with an Eat Clean classic. My Low-carb hot and sour courgette noodles with Sichuan fragrant oil is a great dinner with a satisfying spicy kick. Courgette noodles are really easy to achieve - just wash and peel the courgettes and, using a potato peeler, slice them into thin strips. Toss them in the Lotus Wok with garlic, ginger and red chilli. The hot oil dressing is super tasty and provides a small kick to the metabolism courtesy of all the spice.
