It’s the 1st June although you wouldn’t know it looking out of my window this morning! Anyway, I’m determined not to feel defeated by the weather! With June comes a new season of tasty foods including strawberries, cherries and raspberries but today I wanted to look at the delicious Mackerel fish. Mackerel is a migratory fish and comes to the UK in spring and early summer before they move to warmer seas in the autumn months so now is a great time to be cooking them. They are a great source of protein and rich in omega-3 fatty acids which are anti-inflammatory and keep the heart healthy. It’s also packed with vitamins, minerals and contains the antioxidant coenzyme Q10, which plays a fundamental role in releasing the energy from the food we eat. You can simply grill a fresh fillet or pop on the BBQ with a simple side salad.
