Mother's Day is the perfect opportunity to celebrate the wonderful woman in our lives who have given us so much. Add a touch of sweetness and make her day truly special by spoiling her with a delicious home cooked meal with an Asian twist. I’ve given you two dishes because mothers deserve an extra special treat. My Beef Teriyaki Steak with garlic tenderstem, followed by Apple, lychee and blackberry crumble. I love the Japanese teriyaki marinade and my Beef Teriyaki Steak is so easy to make. Perfect with the best quality sirloin steaks you can get your hands on, marinade them, fry them in the wok until lovely and sticky but not too long so the inside of the beef is lovely and medium and juicy. Serve with brown rice and some steamed, garlic tenderstem which is low in fat and an excellent source of vitamin A, C and iron. Quick, easy, fast and delicious! If you are vegan, you can substitute the beef for tofu steaks and mushrooms and still have a dish packed with flavour. My Apple, lychee and blackberry crumble is my take on English crumble, the Chinese influence here being lychees. I think the trio of apple, lychee and blackberry makes for a delicious combination. Great served with custard or a scoop of homemade lychee and vanilla ice cream. Wishing all the mum’s out there a very special Mother’s Day. Put your feet up and let someone else do all the cooking.
