It’s Christmas Eve!! My last blog before Christmas and, although we haven’t even put the turkey’s in the oven yet, I wanted to suggest a Chinese way to use up all those delicious left overs on Boxing Day. How about trying my Roast turkey lettuce wraps? They are a light and healthy way to use leftover turkey shreds off the bone. Originally inspired by Shredded Duck Lettuce Cups, shred the leftover meat off the turkey, reheat in the oven to warm through again. Tip for reheating turkey: place on a dish on a rack in a roasting tray half filled with water, cover it all with foil and steam heat so the meat is lovely and tender and not dry. Serve in lettuce gem “wrap” leaves, garnished with cucumber slices and spring onion. Use up the left over cranberry sauce mixed with hoisin for a sharp sweet hit. It is really simple and quick to make and perfect for a light lunch when you are still feeling full from Christmas Day.
