The dish contains a host of vitamins and minerals and the aubergine and tomatoes are loaded with super powers! Aubergines contain phytonutrients, many of which have antioxidant activity, they are high in fibre and keep you fuller for longer. Tomatoes contain great amounts of vitamin A, C, K, folate and potassium and many more, all necessary for good health!
