Made from rice flour and water, rice noodles come in a variety of different shapes and sizes. I like to buy mine dry from the supermarket so I always have some in my store cupboard. They have a wonderful delicate flavour and a distinctive texture which works as a great base for lots of my recipes. You don’t need to worry about counting calories as they are low in fat and high in fibre, zinc and iron. They are delicious in a stir fry or soup and if you feel like a tasty treat then you can deep fry them and use them as a garnish or topping – watch out for the fat content though!
