Eat Clean at Christmas: WALNUTS

With just over a week to go, I am now in full Christmas mode and there is so much to do! It would be easy for me to indulge in fatty and sugary food on the account of it being Christmas but, I am really trying to resist, despite the odd chocolate here and there ;-) You can always swap some seasonal favourites to a healthier alternative, without compromising on flavour. This week I have decided to look at the trusty walnut. Often piled high in a bowl alongside the brazils, chestnuts and a pair of nut crackers, they have always been a Christmas favourite. Now these nutty gems are available to us all year long and can be used in many different ways. They can make a very fuelling snack over the festive period so rather than reaching for the crisps this Christmas, I try to keep a small bowl of walnuts nearby. I need all the energy I can get! They are high in magnesium, zinc, omega-3 fatty acids, protein and fibre. Throw in some vitamin B and antioxidants, you really can’t go wrong. As with everything, eat in moderation. Why not try my really quick and simple salad to eat alongside your leftover cold turkey? My Chicory, apple, dates, watercress and toasted walnuts is a really fresh and crispy salad. The chicory has a lovely bittersweet taste and crunchy texture. The apple and dates add pops of sweetness and a host of vitamins and minerals. The walnuts provide the nutty bite.
