Chilli Crab with Coconut Noodles

    With Chinese New Year celebrations still in full flow, I am going to treat myself to Chilli Crab with Coconut Noodles this weekend!  A fabulous celebration dish, inspired by a Chilli crab recipe I tried in Malaysia.   Yes, this is an indulgent dish but, perfect if you can find the freshest organic crabs. If you can’t get crabs, you can try prawns and for a vegan option, use tofu and pak choy.   I sometimes prefer a slightly healthier alternative so I just cut down on the oil, swap to low sugar/salt ketchup, just a teaspoon of sugar, reduced fat coconut milk and use a wholegrain noodle.  Better for you, without compromising on flavour!   Yummy!   Have a great weekend!   Love Ching x
