As we hit July, there is a new superfood in town! Grown in the UK and a close cousin to kale, I love to cook with the delicious Cavolo Nero. Billed as “the new green star”, it has a lot going for it. It is packed with antioxidants, high in vitamins and minerals including lutein, vitamins A, C, K, fibre, calcium, manganese and iron. It’s available in the UK from July to October and perfect steamed or used in stir fries or, shredded into a salad. My Steamed Chinese sesame chicken with supergreen salad is a pure and tasty dish that is low in fat. The orange segments give the salad a fresh zing to keep those taste buds happy. Try and use organic or free range chicken to get the best flavour and, if you are vegan, substitute for pan fried large slices of fresh firm tofu in soy, mirin marinade.
