Butternut Squash

2015-09-04 23:32:56|Food

As regular followers know, I love to champion seasonal ingredients.  Not only does it ensure that the produce is at it’s very best, it is also fresher, cheaper and better for the environment. September gives us an abundance of seasonal fruit and vegetables to enjoy and one of my favourites is butternut squash. They are at their most flavoursome and nutritious through autumn so now is the time to grab them.  They are packed with vitamin C and B6, carotenoids and are high in fibre. As the weather gets colder and the days draw in, we all need a warm and comforting breakfast to get our day started.  I love this recipe for Nourishing butternut squash, shiitake mushroom, Savoy cabbage and brown rice congee from Eat Clean: Work Yourself to Health.  It will deliver sustained energy from the butternut squash and the brown rice and the chilli and ginger will give you a metabolic boost.   Give it a try and let me know what you think.
