What better way to celebrate British Egg Week than to extol the virtues of the simple free-range organic egg and share one of my favourite recipes with you from Eat Clean: Wok Yourself to Health. Egg has featured in all my cook books over the years. Whether it’s cooked into egg fried rice or added to a stir-fry, they are incredibly versatile, nutrient dense and hold a wealth of vitamins and minerals. A medium egg holds less than 70 calories and if you cook with the egg whites alone, you are left with a high quality protein with no fats or carbs. However, don’t forget to save the delicious yolk too! It is full of essential fatty acids and accounts for most of the healthy vitamins and minerals.
