I can never get tired of avocado! It is super nutritious and in season this month. In Chinese it is known as Niu you Guo, or nature’s butter. It has high levels of monounsaturated fat (good fats!), which helps regulate blood sugar and is great for the heart. For breakfast, I love spreading a slice of rye toast with a chunky layer of ripe avocado, topped with a poached egg or fried egg (preferably sunny side up) and a drizzle of soy sauce.
