Cold noodle salads are one of my favourites from the street vendors in China. They sell the noodles in small plastic bags, with shredded vegetables, onion, chilli and plenty of peanut sauce. The bag is sealed and tossed before being handed to you with a pair of chopsticks so you can start feasting. It’s so delicious that I’ve created my own version - Peanut chicken noodle salad! So simple and full of crunch and flavour. Don’t forget to use organic chicken to get most out of the dish or, if you are vegan, use some julienne smoked tofu instead.
