I’ve decided to sign up for Meat Free May, a campaign being run by the wonderful charity, Friends of the Earth. It is asking for people to ditch meat and fish for a whole month and put veggie meals on the menu instead. With so many new and exciting vegetarian recipes, reducing the amount of meat we eat should be easy and great for our health and environment. To help us all on the way, I will post up at least one vegetarian recipe from the website throughout the month of May. I am going to start with my Kimchi and water chestnut and enoki mushroom stir fry. The combination of spicy flavours makes for a delicious marriage in Lotus wok heaven.
