Ching-He Huang Newsletter – issue 8

GROWing with Oxfam

I’m really proud to have supported Oxfam’s GROW campaign (http://oxfamontour.org/coldplay/ching-he-huangs-chinese-fakeaway/) recently, which is campaigning for a future where everyone has enough to eat. About a billion people around the world currently go hungry every night. The guys at Oxfam are doing a great job educating people to think before they choose which foods to buy.

Earth Hour

March 31st at 8.30pm is Earth Hour, WWF’s global initiative where hundreds of millions of people turn off their lights for one hour. It’s about appreciating the brilliant world we all share – and how we need to protect it. See the video I prepared (http://www.youtube.com/watch?v=moJaHqDKZxg) demonstrating how to make some relaxing tea to enjoy during Earth Hour.

FEBRUARY 2012

Happy Valentine’s Day!

At one of the most romantic times of the year, I find myself filming in one of my favourite cities, Los Angeles. I’ve been lucky enough to experience some of the area’s most romantic places, this city really is great for inspiring some romantic recipes.

Goodie bags included delicious teas and tea storage boxes from Chinalife and a box of Ching's signature chopsticks (sponsored by Rayware, which will be available in department stores later in the year). All the proceeds went to supporting Asia House and money was raised to support Japan.

Over their 12-year history, the Asian Women of Achievement Awards have recognised and provided a platform for an exciting generation of Asian female groundbreakers - such as comedy actress Nina Wadia; civil rights activist Shami Chakrabarti; and the first Asian woman to lead a FTSE 250 business, Ruby McGregor-Smith. JANUARY 2011

Happy New Year everyone!

Catch Ching contributing on Gordon's Big Fish Fight on Sunday 16th January Channel 4 at 9pm.

Ching's thoughts on Shark's Fin Soup:

"The Chinese traditionally eat Shark's fin soup at special occassions such as weddings but it has become a popular dish to be consumed not only on special occassions but at business banquets or dinner parties. It is a delicacy and a national prized dish with cultural and historical importance that has appeared on the menus of Imperial China since the Sung dynasty (960 AD).

It is the "kou-gan" or "mouthfeel" (textural feel) of this dish that is unique (coupled with slow cooked chicken and dried scallops etc that gives the dish a delicious flavour).

At the end of the day, it is not reasonable for anyone to judge such another's food choice. However, the cruelty of this fishing is unquestionable. If this dish is to remain on the tables at Chinese banquets, I strongly urge the governments of all nations to put an end to this cruelty.

From the information I have' I am doubtful there is a way to regulate and control the fishing effectively which leads me be believe there should be a total worldwide ban on Shark's fin to protect the species.

I can't tell you how much I love this dish but it is our responsibility to the planet to safeguard all endangered species. All fisheries and agriculture should be sustainable, we need to respect the environment, otherwise we are just endangering ourselves and future generations."

Get involved! Ching has teamed up with Chinese beer, Tsingtao, to find Britains favourite Chinese restaurant! Chinese cooking is a clever art and it's important that its transition into western society allows it to remain faithful to its heritage. The Legacy of Taste competition will provide an opportunity to uncover some undiscovered Chinese restaurants that get the food just perfect.

'We're on the hunt for restaurants that go the extra mile for their customers, the ones that people go back to again and again because no other place matches up to it - it could be a tiny, independent back street place or part of a well known chain'.

To nominate visit - www.legacyoftaste.co.uk. Nominations close mid-July for the dining public and then public voting will begin. The four restaurants with the most votes will compete in autumn when Ching will lead a panel of experts to judge which restaurant will be crowned The Legacy of Taste champion of 2010.

The winning restaurant will be presented with the award at Courthouse Doubletree by Hilton, the hotel sponsor of the campaign, on October 28, 2010. One person who voted for the winning restaurant will be picked at random to win a trip for two to China.
